Wine Tasting Notes-2008 Vintage

Mr. Nitin Shinde has a degree in Plant Science/Botany and did his Post Graduation in Oenology from Adelaide University, Australia. With all his expertise he and his team comprising of Mr. Girish Kamble/ Assistant Winemaker (Experience with Hardy’s Winery, Australia) monitored the estate vineyards and contract farms very carefully. All aspects such as nutrient management, canopy management and water management were taken under minute considerations. This helped us to keep the spray regime to bare minimum during the whole season.

In the Vineyards:
The year 2008 was a relatively very cool year with events of frost happening in some areas of Nashik (well known belt for cultivation of table as well as wine grapes in Maharashtra). The climate was uniform throughout the season, hence less variations in climate helped in good accumulation of flavours, good retained natural acidity and also due to well managed canopy and proper sunlight we managed to get good colour.

In the Winery
The grapes were allowed to cold soak after crushing and initially the temperatures were allowed to rise to 27 degrees C and then the fermentation was done at 23-24 degrees C. Cap management was done very well for the reds to get maximum out of it. We used non toasted French oak planks during fermentation which helped enhance the aromas and remove the green character. The wines were also allowed to undergo post ferment maceration and after that pressing operations were done. For our special wines we used a combination of new and old French oak during maturation.

The wines underwent Malolactic fermentation easily and finished off clean. We had no stuck ferments; hence the wines are clean without any off odors. We did minimum handling after that, this helped us maintain the wines with very low addition of sulfur dioxide. Minimum filtration has helped the wines to retain the delicate fruit flavours and the wines are already showing developed characters.

Zinfandel

Appearance : Dark red with light purple hue, with distinct legs and good clarity

Smell: The wine is clean on nose with intense plums, raspberries, liquorices and shows developed characters like chocolate and leather.

Taste: Intense sweet fruit with spice, plum and dark cherries. The tannins are soft and the wine is well balanced with fruity finish

A medium bodied, fruity and cozy drinking wine.

Shiraz

Appearance : Dark red colour with purple rim and good viscosity with distinct legs, good clarity

Smell:Intense ripe cherries, strawberries, blackberries, spice with a hint of pepper and green olives. Also, showing developed fruit characters such as chocolates and fruit cake.

Taste:Very fresh and clean wine with intense fruit such as raspberries, sweet lollies/confectionary character, blackberries spicy with dusty and supple tannins. A well balanced wine with complex bouquet having very good length.
A medium bodied, complex, intense fruity wine with very good length.

Cabernet Sauvignon

Appearance: Intense dark red colour with distinct violet rim. The wine has good viscosity showing distinct thick legs and good clarity.

Smell: The wine is very fruity with intense spice, blackcurrants, black olives, tomato bush with hints of capsicum and dusty rose.

Taste: The wine is complex with intense blackcurrants, herbaceous, with developed characters like chocolates, pencil shavings. The tannins are velvety and mouth filling.

The wine is medium to full bodied, complex with good length and will improve in the bottle with 1-2 years bottle maturation.

Cabernet-Shiraz

Appearance: Dark red in colour with light purple rim and shows good viscosity with disctinct legs.

Smell:Intense blackcurrants with a hint of tomato bush followed by raspberries, dusty, fennels, sweet fruit and spicy character.

Taste:Wine is fresh with intense blackcurrants, black olives, spicy with a hint of pencil shavings and showing developed characters such as coffee and chocolate. The wine has mouth filling slightly coarse, dry tannins.

Overall the wine is well balanced with good tannins and a mix of primary fruit and developed flavours. Drink now or will develop well with 2 years of bottle maturation.

Shiraz – Cabernet - Merlot

Appearance: Intense Dark red in colour with light purple rim and shows good viscosity with disctinct legs.

Smell: Very intense blackcurrants, plums, raisins, blackberries, vanilla with soothing menthol character followed by ripe cherries and spice.

Taste: Wine is fresh with intense blackcurrants, blackberries, spicy clove character, cherries and showing good integration of oak with a long length well rounded plummy on finish. The wine has mouth filling velvety, tannins.

Overall the wine is well balanced with good tannins and a mix of primary fruit and developed flavours with well integrated oak. Drink now or will develop well with 2 to 3 years of bottle maturation.
